Lime Chicken Burritos

First make taco seasoning. (Or skip this part and use store bought)
In a bowl mix:
2 1/2 T chili powder
1 1/2 T paprika
2 T cumin
1 T garlic powder
1 1/2 T onion powder
1/4 t cayenne
1 t salt
1/4 t black pepper

Here’s a version online that I got my recipe from. I tweaked it a little bit. It’s a great seasoning!

The seasoning recipe makes 4 servings. You use 7 teaspoons of the finished seasoning on one pound of meat.

So to make this chicken I made a simple marinade. (For 1 pound of chicken)
3 T olive oil
1 – 2 T fresh lime juice (I love lime juice, I use 2 T)
7 teaspoons of taco seasoning or one store bought packet

Mix the olive oil, lime juice, and seasoning in a bowl. Put the chicken thighs into a foil lined, then greased 8×8 pan (or 9×9)
pour the olive oil mix over the chicken. I use a plastic fork to spread it evenly around the chicken.
Bake uncovered for 45 minutes at 450. Or bake for an hour at 425, turning the chicken halfway.

Then I sliced the chicken thinking I’d put it in burritos that way. Later I ended up cubing it and adding it to the rest of the burrito ingredients.

Here are ALL the recipes I used that night.

Taco Seasoning:

Mexican Lime Chicken:
1 pound chicken thighs
1 – 2 T fresh lime juice
3 T olive oil
7 teaspoons taco seasoning or one packet store bought taco seasoning
Put the chicken thighs in a foiled lined, then greased 8×8 or 9×9 baking pan.
Mix olive oil, lime juice, and seasoning together and pour over chicken.
Bake for 45 minutes in a 450 degree oven. Or until done.
Use: in any mexican type of dish. Great for taco salad, burritos, tacos, or even just chicken and rice.

Easy Chicken Burritos:
One pound cooked, cubed lime chicken.
one can diced tomatoes
one can black beans
one chopped onion
shredded cheese
avocado
sour cream
cilantro
tortillas

Cook chopped onion in a tablespoon or two of butter or olive oil. I use butter.
Add the can of black beans (I rinse mine) and the can of diced tomatoes. Let heat for just a minute or two.
Add the cubed, cooked chicken and simmer for five minutes or so on medium low.
Put this filling in tortillas and add shredded cheese.
Extras are avocado, sour cream, and cilantro. Though cilantro is really a must, not an extra, isn’t it?
